Reach for fresh tomatoes, fresh mozzarella, and fresh herbs to take it over the top. Nettie shared how to make your own balsamic glaze at home with the magic of reduction.
Caprese Chicken
INGREDIENTS
- Pesto
- Chicken breasts or tenders
- Sliced tomatoes
- Mozzarella
METHOD
- Cook chicken breasts or tenders.
- Layer with pesto, sliced tomatoes, and mozzarella to top.
Homemade Balsamic Glaze
- Start with a good-quality balsamic vinegar. In a saucepan over medium heat, mix 1 cup of balsamic vinegar with ¼ cup of brown sugar, or your sweetener of choice. Whisk until the sugar dissolves.
- Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes. The glaze should reduce by about half and coat the back of a spoon.
- Let it cool, then pour it into a lidded jar and seal. Store in fridge.
