Pack the school lunch boxes with fresh meals the kids will love.

If you’re in a school lunch rut, we’ve got you! Brittney Hanks’ newest cookbook, A Guide to School Lunches, simplifies school lunch prep with fresh ideas even your pickiest eaters will love.

Brittney shared two recipes from her cookbook: mini pepperoni pizzas and ramen noodles. If your kids are sick of packing a PB + J, (or maybe you’re sick of making it!) add these easy ideas to your lunch rotation.

Mini Pepperoni Pizzas

“Feel free to add any other favorite toppings like ham, pineapple, olives, tomatoes, etc. I’ve had good luck finding the naan rounds and mini pepperoni at Target, but naan dippers work as well if you can’t find the rounds.” -Brittney

INGREDIENTS

  • 4 naan rounds
  • ¼ cup shredded mozzarella cheese
  • ¼ cup mini pepperoni
  • 2 Tbsp pizza sauce

METHOD

  1. Add the naan rounds, mozzarella, and pepperoni to an airtight container, keeping the naan rounds separate so they don’t get soggy.
  2. Add the pizza sauce to a small condiment cup.

Storing

Extra pizza kits can be assembled and stored in the fridge in airtight containers for 3-4 days.

Packing

Place the pizza container in a lunchbox with the sides/snacks and utensils. Include an ice pack.

 

Ramen

“Be creative with your freeze-dried add-ins! Peas and carrots are favorites, but you can also add corn and onions.” -Brittney

INGREDIENTS

  • 1 ramen square, broken into pieces (Brittney finds her ramen noodles in a bag at Trader Joes)
  • 1 tsp ramen seasoning
  • 1 Tbsp freeze-dried peas
  • 1 Tbsp freeze-dried carrots
  • 1 ½ cups chicken broth

METHOD

  1. Add the broken ramen, ramen seasoning, freeze-dried peas, and freeze-dried carrots to an insulated container.
  2. Boil the chicken broth on the stove or heat in the microwave for about 2 minutes.
  3. Add the heated chicken broth to the insulated container with the ramen.

Storing

If you have extra insulated containers, you can pre-assemble all the dry ingredients in an insulated container ahead of time and just add the heated chicken broth the morning of.

Packing

Place the insulated container upright in a lunchbox with the sides/snacks and utensils. The ramen will stay warm for 3-4 hours.
