Toss some meal-prepped egg bites in the microwave and send the kids off to school!
We’re mixing things up in the kitchen and using the ‘phone a friend’ option. Inviting familiar faces from the KSL News team to share a recipe in the Studio 5 kitchen. These egg bites will make your back-to-school mornings a breeze! They’re easy to make, protein-packed, and totally customizable to any taste.
KSL’s Casey Scott shared the recipe. Casey gets most of his recipes and cooking inspiration from Instagram Reels—which is exactly where he found this idea! The entire recipe is made in a muffin tin for easy prep and cleanup. Plus, you can easily freeze and save ’em for later! Cook the egg bites, throw them into a Ziploc bag, and freeze. When you’re ready to eat, stick them in the microwave for 30 seconds (or the air fryer for a more crispy kick)!
Casey Scott’s Egg Bites
INGREDIENTS
- 1 dozen eggs
- Salt and Pepper
- Bacon or Bacon Bits
- Tortillas
METHOD
- Crack and beat 1 dozen eggs into a large bowl. Season with salt and pepper. Add any other seasonings you’d like.
- Spray muffin tin with cooking spray. Preheat oven to 375.
- Roll up a whole tortilla. Using kitchen scissors, cut your tortilla 2-3 inches apart. place each cut spiral in a separate muffin tin. Continue cutting until each muffin cup has a tortilla spiral.
- Evenly distribute egg mixture into cups throughout muffin tin.
- Sprinkle bacon bits on top.
- Bake at 375 degrees for about 30 minutes, or until eggs are set.
